Combining a 9-6 job with an hour commute each way leaves a lot of time for being hungry; I can say this with some certainty. After eating breakfast at seven I’m ready for round two by nine, and then again at 11, so I needed a robust snack that was both filling and healthy, as per.
After trailing through vegan cookery books and blogs, and consequently Googling ingredients I’d never heard of or certainly didn’t have, I settled for something as simple as possible; an oat bar that I could literally wrap up and chuck in my bag, ready to be bumped around on the great London commute.
By combining bananas with oats you have the base for a great soft energy bar, a platform for whatever additions you so wish. I wished for sour cherries, crunchy almonds and chia seeds, and soft, marshmallowy baked pear. Outrageously simple, highly recommended.

2 large, very ripe bananas
1 tsp vanilla extract
2 cups rolled oats
1/2 teaspoon salt
1/4 cup flaked almonds
1 cup frozen balckcurrants
1 tbsp chia seeds
1 pear, chopped and sliced
A few cherries
Blend the bananas so that they are a liquid, mix in all the dry ingredients and spread into a baking tin. Top with the sliced pear and push in the halved cherries. Bake for about 30 mins and 175 C until golden and firm.
